Lao Cong Shui Xian (Old Arbor Water Sprite)
Zheng Yan Garden - Hui Yuan Keng - Wuyishan National Nature Reserve
These large Shui Xian tea leaves come trees that are greater than 70 years old. The tea garden is located in the Zheng Yan (Wuyishan National Nature Reserve) which is where the most prized Wuyi Cliff Oolongs come from. ANCIENT WATERS was hand sorted by the grandmother matriarch of the Chen family in Wuyi. The main feature of this tea is the "yanyun," which is the rocky/minerality lingering effect of that Wuyi Oolongs are famous for.
The tea soup is very balanced and smooth, as it has been roasted and has had time to rest. This batch was harvested in May 2021 and has undergone roasting 3 times with traditional longan wood charcoal to provide a medium roast.
ANCIENT WATERS has been roasted and rested, it's ready to drink now or can age longer to mellow out.

Gong Fu Brew: First infusion: 5 grams / 100 mL / 100° C / 5 secs
Second infusion: 100° C / 8 secs
Then add 5 seconds for each subsequent infusion.
